Sate Ayam (Indonesian Chicken Satay)

Ingredients

For the Chicken Marinade:
  • 1 lb (450 g) chicken breast or thigh, cut into bite-sized cubes
  • 2 tablespoons soy sauce
  • 1 tablespoon kecap manis (sweet soy sauce)
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
For the Peanut Sauce:
  • 1/2 cup roasted peanuts (or peanut butter)
  • 1/2 cup coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon kecap manis
  • 1 clove garlic, minced
  • 1 teaspoon lime juice
  • 1/2 teaspoon chili flakes (optional)
  • Salt to taste

Instructions

  1. Marinate the Chicken

    In a bowl, combine the chicken cubes with soy sauce, kecap manis, turmeric, coriander, minced garlic, vegetable oil, salt, and pepper. Mix well and let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.

  2. Prepare the Skewers

    Thread the marinated chicken onto skewers, leaving a little space between pieces for even cooking. If using wooden skewers, soak them in water for 20 minutes beforehand to prevent burning.

  3. Grill the Chicken

    Preheat a grill or grill pan over medium-high heat. Grill the chicken skewers for 3–4 minutes per side, or until fully cooked and slightly charred.

  4. Make the Peanut Sauce

    In a small saucepan, combine peanuts (or peanut butter), coconut milk, soy sauce, kecap manis, minced garlic, lime juice, chili flakes, and salt. Cook over low heat, stirring frequently, until the sauce is smooth and creamy. Adjust seasoning to taste.

  5. Serve

    Place the grilled chicken skewers on a serving platter and drizzle generously with peanut sauce. Garnish with chopped fresh cilantro or lime wedges if desired.
