Sadza (Zimbabwean Cornmeal Porridge)

Ingredients

  • 2 cups finely ground white cornmeal (maize meal)
  • 4 cups water
  • ½ teaspoon salt

Instructions

  1. Prepare the Base

    Bring 3 cups of water to a boil in a medium saucepan. Add the salt. Gradually pour in 1 cup of the cornmeal, stirring constantly to prevent lumps. Cook over medium heat for 5–7 minutes, stirring until the mixture thickens into a smooth porridge.

  2. Thicken the Sadza

    Reduce the heat to low. Gradually add the remaining 1 cup of cornmeal, stirring vigorously with a wooden spoon. Continue to cook for another 5–10 minutes, stirring frequently, until the Sadza is thick, smooth, and pulls away slightly from the sides of the pan.

  3. Serve

    Transfer the Sadza to a serving bowl. Wet a wooden spoon or spatula to shape it into a smooth mound if desired. Serve immediately with stews, grilled meats, sautéed greens, or peanut butter sauce for a traditional Zimbabwean meal.
