- 1 quart (about 1 liter) whole milk

Remove the saucepan from the heat and let the milk cool to 110°F (43°C).

Place the container in a warm spot, such as an oven with the light on or a yogurt maker, and let it sit undisturbed for 8–12 hours, or until thickened.
