Ingredients

  • 1 quart (about 1 liter) whole milk
  • 2 tablespoons plain yogurt with live active cultures

Instructions

  1. Heat the Milk

Heat the milk in a saucepan over medium heat until it reaches 180°F (82°C), stirring occasionally to prevent scorching.

  2. Cool the Milk

Remove the saucepan from the heat and let the milk cool to 110°F (43°C).

  3. Prepare Yogurt Starter

In a small bowl, mix the plain yogurt with a few tablespoons of the warm milk until smooth.

  4. Combine and Incubate

Pour the yogurt mixture back into the saucepan with the remaining milk and stir to combine. Transfer the mixture to a clean glass container and cover it with a lid. Place the container in a warm spot, such as an oven with the light on or a yogurt maker, and let it sit undisturbed for 8–12 hours, or until thickened.

  5. Refrigerate

Once the yogurt is set, refrigerate it for at least 4 hours before serving.
