Moros y Cristianos (Cuban Black Beans and Rice)

Moros y Cristianos, meaning “Moors and Christians,” is a Cuban dish that symbolizes the cultural history of the island. The "Moors" are represented by the black beans, while the white rice symbolizes the "Christians." This hearty dish combines flavorful beans, fragrant rice, and aromatic spices, making it a staple in Cuban cuisine.

Ingredients

  • 1 lb (450 g) black beans, dried
  • 2 cups (400 g) long-grain white rice
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 4 garlic cloves, minced
  • 4 cups (1 liter) water or vegetable broth
  • 1/4 cup (60 ml) olive oil
  • 1 tsp ground cumin
  • 1 tsp oregano
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tbsp white vinegar
  • 1/2 tsp sugar
  • Fresh cilantro for garnish (optional)

Instructions

  1. Prepare the Beans

    Rinse the black beans thoroughly. Soak them overnight in water or use the quick soak method by boiling for 2 minutes, then letting sit for an hour. Drain and set aside.

  2. Cook the Beans

    In a large pot, add the soaked beans, 4 cups of fresh water or broth, bay leaves, and a pinch of salt. Bring to a boil, then reduce heat to a simmer. Cook for 1–1.5 hours, until beans are tender but not mushy. Remove bay leaves and set beans aside, reserving the cooking liquid.

  3. Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add diced onions, green bell peppers, and minced garlic. Sauté for 5–7 minutes until softened and fragrant.

  4. Add Spices and Beans

    Stir in cumin, oregano, sugar, and a pinch of pepper. Add the cooked black beans and about 1 cup of reserved bean liquid. Simmer for 10 minutes to blend flavors.

  5. Cook the Rice

    In a separate pot, combine 2 cups of rice with 4 cups of water or broth. Bring to a boil, then reduce heat to low. Cover and cook 18–20 minutes until rice is tender and water is absorbed.

  6. Combine Beans and Rice

    Gently fold the cooked rice into the bean mixture. Add vinegar and adjust seasoning with salt and pepper. Cook together for another 5 minutes.

Serving

Serve Moros y Cristianos as a main or side dish. It pairs well with roasted meats, fried plantains, or a fresh green salad. Garnish with fresh cilantro for color and freshness.
