Pupusas

Pupusas are a traditional Salvadoran dish consisting of thick corn tortillas filled with cheese, beans, or meat. Often served with curtido (a tangy cabbage slaw) and salsa roja, these delicious treats offer a comforting taste of El Salvador.

Ingredients

For the dough:
  • 4 cups (1.36 lb / 0.62 kg) masa harina (corn flour)
  • 3 cups (0.71 liters) warm water
  • 1 teaspoon (0.005 lb / 0.002 kg) salt
For the fillings:
  • 2 cups (0.5 lb / 0.23 kg) shredded mozzarella cheese
  • 1 cup (0.5 lb / 0.23 kg) refried beans
  • 1 cup (0.5 lb / 0.23 kg) cooked pork, finely chopped (optional)

Instructions

  1. Prepare the Dough

    In a large bowl, mix the masa harina and salt. Gradually add the warm water, mixing with your hands until a soft, pliable dough forms. Cover with a damp cloth and let rest for 10 minutes.

  2. Prepare the Fillings

    Cook and finely chop the pork if using. Ensure the cheese is shredded and the refried beans are smooth and spreadable.

  3. Shape the Pupusas

    Divide the dough into 12 equal balls. Flatten each into a 4-inch (10 cm) disk. Place about 1 tablespoon of filling in the center.

  4. Seal the Pupusas

    Fold the edges over the filling, pinching to seal, then gently flatten back into a thick disk, ensuring the filling is enclosed.

  5. Cook the Pupusas

    Heat a non-stick skillet or griddle over medium heat. Cook for 4-5 minutes on each side, until golden brown. Some filling may ooze out, which is normal.

Serving

Serve hot with curtido and salsa roja. Pupusas are best enjoyed fresh but can be reheated if needed. This authentic Salvadoran recipe offers a comforting handheld meal perfect for family or special occasions.
