4 cups (1.36 lb or 0.62 kg) masa harina (corn flour)

3 cups (0.71 liters) warm water

2 cups (0.5 lb or 0.23 kg) shredded mozzarella cheese

1 cup (0.5 lb or 0.23 kg) refried beans

1 cup (0.5 lb or 0.23 kg) cooked pork, finely chopped (optional)

Instructions:

Prepare the Dough:

In a large bowl, mix the masa harina and salt. Gradually add the warm water, mixing with your hands until a soft, pliable dough forms. The dough should be moist but not sticky. Cover the dough with a damp cloth and let it rest for 10 minutes.

Prepare the Fillings:

If using pork, cook and finely chop the meat. Ensure the cheese is shredded and the refried beans are smooth and spreadable.

Shape the Pupusas:

Divide the dough into 12 equal balls. Flatten each ball into a disk about 4 inches (10 cm) in diameter. Place about 1 tablespoon of your desired filling (cheese, beans, or pork) in the center of the disk.

Seal the Pupusas:

Carefully fold the edges of the disk over the filling, pinching to seal it, and then gently flatten it back into a thick disk, ensuring the filling is enclosed.

Cook the Pupusas:

Heat a non-stick skillet or griddle over medium heat. Cook the pupusas for about 4-5 minutes on each side, or until golden brown and slightly crispy. The filling may ooze out a bit, which is normal.

Serving:

Serve the pupusas hot, accompanied by curtido and salsa roja. Pupusas are best enjoyed fresh off the griddle, but they can also be reheated if needed.
