Ingredients
2 lb (900 g) russet potatoes
1 cup (0.5 lb / 250 g) cheese curds
2 cups (480 ml) brown gravy
4 cups (1 L) vegetable oil for frying

Instructions
Prepare the Potatoes Wash and peel the russet potatoes. Cut into thick strips for fries and soak in cold water for 30 minutes to remove excess starch. Drain and pat dry.
Heat the Oil In a deep fryer or heavy-bottomed pot, heat the vegetable oil to 325°F (160°C).
First Fry Fry the potatoes in batches for 4–5 minutes until soft but not browned. Remove and let them drain on paper towels.
Second Fry Increase the oil temperature to 375°F (190°C). Fry the potatoes again until golden and crispy, about 3–4 minutes. Drain and sprinkle with salt.
Prepare the Gravy Heat your prepared brown gravy on the stovetop until hot. Ensure it’s thick and flavorful.
Assemble the Poutine Place the fries in a serving dish. Scatter the cheese curds over the hot fries, ensuring they begin to melt slightly. Pour the hot gravy generously over the top.
