2 cups (250 g) powdered sugar
2 tbsp (30 ml) heavy cream
2 tbsp (30 g) vanilla custard powder or instant pudding mix
For the Topping
0.25 lb (115 g) semi-sweet chocolate
2 tbsp (30 g) unsalted butter
Instructions
Prepare the Base In a saucepan, melt butter over low heat. Stir in sugar and cocoa powder until smooth. Gradually add the beaten egg, stirring constantly until thickened (about 1–2 minutes). Remove from heat. Mix in graham cracker crumbs, shredded coconut, and nuts (if using). Press firmly into a parchment-lined 8x8 inch (20x20 cm) baking pan. Refrigerate for 20 minutes.
Make the Filling In a mixing bowl, beat butter, powdered sugar, heavy cream, and custard powder until light and creamy. Spread evenly over the chilled base. Refrigerate for 30 minutes.
Prepare the Topping Melt chocolate and butter together in a heatproof bowl over simmering water (or microwave in short bursts). Stir until smooth. Let cool slightly before spreading over the filling.
Chill and Cut Refrigerate for at least 2 hours until firm. Use a sharp knife, warmed under hot water, to slice into squares or bars.
