Bint Al-Sahn (Yemeni Honey Cake)

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon dry yeast
  • 1 cup warm water (adjust as needed)
  • 1/4 cup vegetable oil, plus extra for brushing
  • 1/2 cup ghee or melted butter
  • Honey, for drizzling
  • Sesame seeds, for garnish

Instructions

  1. Prepare the Dough

    In a large bowl, combine flour, salt, sugar, and dry yeast. Gradually add warm water and knead until a smooth, elastic dough forms. Cover the dough with a cloth and let it rest for about 30–45 minutes, allowing it to rise slightly.

  2. Shape the Layers

    Divide the dough into 4–6 equal portions. Roll each portion into a very thin circle, brushing lightly with vegetable oil or ghee between layers. Stack the layers carefully to maintain the delicate flakiness.

  3. Cook the Cake

    Heat a large skillet over low-medium heat. Carefully transfer the layered dough to the skillet. Cook slowly, covering the skillet, until the bottom is golden brown, about 10–12 minutes. Flip the cake gently and cook the other side until golden and fully cooked, another 8–10 minutes.

  4. Serve

    Drizzle generously with honey and sprinkle with sesame seeds. Serve warm.
