- 1-2 Thai bird chilies, finely chopped (optional, adjust to taste)
- 200 grams chicken, shrimp, or tofu, cut into bite-sized pieces
- 2 eggs, lightly beaten
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- 1/2 cup chopped green onions
- 1/2 cup chopped tomatoes
- Lime wedges, for serving
- Fresh cilantro or Thai basil, for garnish
Instructions
-
Prepare the Ingredients
Have all your ingredients prepped and ready, as stir-frying happens quickly.
-
Cook the Protein
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken, shrimp, or tofu and cook until fully cooked and lightly browned. Remove from the pan and set aside.
-
Sauté Aromatics
Add the remaining oil to the pan. Sauté garlic, onion, and chilies for about 1 minute until fragrant.
-
Cook the Eggs
Push the aromatics to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until just cooked.
-
Fry the Rice
Add the cooked jasmine rice to the pan, breaking up any clumps. Stir everything together with the aromatics and eggs.
-
Season the Rice
Pour in soy sauce, fish sauce, and sugar. Mix thoroughly to ensure the rice is evenly coated. Return the cooked protein to the pan and stir to combine.
-
Add Fresh Ingredients
Stir in green onions and tomatoes, cooking for another 1-2 minutes until just heated.
-
Serve
Transfer the fried rice to plates. Garnish with fresh cilantro or Thai basil and serve with lime wedges on the side for a zesty finish.

Khao Pad pairs beautifully with a light soup or a fresh cucumber salad. It’s a versatile dish that works equally well as a standalone meal or part of a larger Thai feast. Enjoy the balance of savory, fragrant, and slightly tangy flavors in every bite.
