Gravlaks (Nordic Cured Salmon)

Ingredients
- 2 pounds (900 g) fresh salmon fillet, skin on, pin bones removed
- 1/4 cup (50 g) coarse sea salt
- 1/4 cup (50 g) granulated sugar
- 1 tablespoon freshly ground black pepper
- 1 large bunch fresh dill, roughly chopped
- 1 tablespoon aquavit or vodka (optional)

Prepare the Cure
In a small bowl, combine salt, sugar, and black pepper. Mix well.

Season the Salmon
Place half of the chopped dill on a large piece of plastic wrap. Lay the salmon fillet on top, skin side down. Sprinkle the curing mixture evenly over the flesh, then top with the remaining dill. Drizzle aquavit or vodka over the top if desired.

Wrap and Cure
Wrap the salmon tightly in plastic wrap, then place it in a shallow dish. Weigh it down with a small cutting board or another dish to help the curing process. Refrigerate for 36–48 hours, turning the fish every 12 hours.

Rinse and Slice
Once cured, unwrap the salmon and gently rinse off the curing mixture under cold water. Pat dry with paper towels. Place the fillet skin side down on a cutting board and slice thinly at an angle.

Arrange the Gravlaks slices on a platter and garnish with fresh dill or lemon slices. Serve with mustard-dill sauce (hovmästarsås), rye bread, or crispbread for a classic Scandinavian experience.
