Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1-2 fresh chili peppers, chopped (optional, adjust to taste)
  • 4 cups chicken or vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup natural peanut butter
  • 2 medium sweet potatoes, peeled and cubed
  • 1-2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish
  • Cooked rice or fufu, for serving (optional)

Instructions

  1. Prepare the Base

Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Stir in the garlic, ginger, and chili peppers, cooking for another 2 minutes until fragrant.

  2. Simmer the Soup

Add the diced tomatoes, sweet potatoes, smoked paprika, cumin, and broth to the pot. Bring to a boil, then reduce heat and simmer for 15–20 minutes, until the sweet potatoes are tender.

  3. Incorporate Peanut Butter

Stir in the peanut butter until fully combined. Use an immersion blender to purée the soup until smooth (or leave slightly chunky for texture). Season with salt and pepper to taste.

  4. Serve

Ladle the soup into bowls and garnish with fresh cilantro or parsley. Serve hot, optionally alongside rice or fufu for a complete meal.

Serving

Peanut Butter Soup is rich, creamy, and satisfying, perfect for cozy dinners or sharing with friends and family. Its nutty depth and warming spices make it a standout dish that celebrates the flavors of West African cuisine.
