2 lbs (0.9 kg) ripe pawpaw (papaya), peeled, seeded, and cubed

1 large cucumber, thinly sliced

1 red bell pepper, julienned

1/4 cup (0.06 kg) fresh cilantro, chopped

1/4 cup (0.06 kg) fresh mint leaves, chopped

1/4 cup (60 ml) lime juice

2 tablespoons honey

2 tablespoons olive oil

Salt and pepper to taste


Prepare the Pawpaw: Peel, seed, and cube the ripe pawpaw. Place the cubes in a large mixing bowl. Add Vegetables: Thinly slice the cucumber and red onion, and julienne the red bell pepper.
