Prepare the Potatoes
Peel and grate the potatoes. Squeeze out excess water using a clean kitchen towel or cheesecloth.

In a large bowl, combine the grated potatoes, chopped onion, eggs, salt, pepper, and dried mint or parsley. Mix well.

Heat 1 tbsp of butter or oil in a large non-stick frying pan over medium heat. Spread the potato mixture evenly across the pan and press it down with a spatula to create a compact layer.

Cover the pan with a lid and cook for 10-15 minutes until the bottom is golden brown and crispy. Carefully flip the Patatnik onto a plate, add the remaining butter or oil to the pan, and slide the uncooked side back into the pan.

Cook the other side for an additional 10 minutes until it’s golden and cooked through.

Remove from the pan, let it cool slightly, and cut into wedges for serving.
