Pastei (Surinamese Savory Pie)

Ingredients
For the Filling:
- 1 lb (450 g) chicken or beef, diced
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon curry powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 1/2 cup chicken or beef broth
For the Pastry:
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup (225 g) unsalted butter, cold and cubed
- 1/4 to 1/2 cup cold water
For Brushing:
- 1 egg, beaten

Prepare the Filling
Heat oil in a skillet over medium heat. Sauté onion and garlic until fragrant. Add meat and cook until browned. Stir in bell pepper, curry powder, cumin, turmeric, salt, and pepper. Add broth and simmer for 15–20 minutes until the mixture thickens. Let cool.

Make the Pastry
Combine flour and salt in a bowl. Cut in butter until mixture resembles coarse crumbs. Gradually add cold water to form a dough. Divide dough in half, wrap, and refrigerate for 30 minutes.

Assemble the Pastei
Preheat oven to 375°F (190°C). Roll out one portion of dough to line a pie dish or individual tins. Spoon the filling over the dough. Cover with the second portion of dough, seal edges, and trim excess. Brush with beaten egg.

Bake for 30–40 minutes until golden and crisp. Let cool slightly before serving.
