Kare-Kare (Filipino Peanut Stew)

Ingredients
- 2 lbs oxtail, cut into chunks (or beef/pork stew meat)
- 1/2 lb tripe (optional), cleaned and sliced
- 1 medium banana blossom, sliced
- 1 small eggplant, cut into chunks
- 1 bunch string beans, trimmed
- 1/2 cup peanut butter
- 2 tablespoons toasted ground rice (for thickening)
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons annatto oil (for color)
- 6 cups beef or water-based broth
- Salt and pepper to taste
- Bagoong (fermented shrimp paste), for serving

Prepare the Meat
In a large pot, combine oxtail, tripe (if using), onion, garlic, and broth. Bring to a boil, then reduce heat and simmer for 2–3 hours, or until meat is tender. Skim any excess fat from the surface.

Cook the Vegetables
Add banana blossom, eggplant, and string beans to the pot during the last 15–20 minutes of cooking. Cook until vegetables are tender but still firm.

Make the Peanut Sauce
In a separate bowl, combine peanut butter and toasted ground rice with a bit of hot broth from the pot. Stir until smooth. Gradually add the mixture back into the pot, stirring to combine. Simmer for 5–10 minutes until sauce thickens.

Stir in annatto oil for a warm, orange hue and season with salt and pepper to taste.
