Pagnotella (Italian Small Bread Loaves)

Ingredients

Instructions

  1. Activate the Yeast

    In a small bowl, mix the warm water, sugar, and yeast. Let it sit for about 10 minutes until the mixture becomes foamy.

  2. Make the Dough

    In a large mixing bowl, combine the flour and salt. Create a well in the center and pour in the yeast mixture and olive oil. Mix with a spoon or your hands until a soft dough forms.

  3. Knead the Dough

    Transfer the dough to a lightly floured surface and knead for about 10 minutes, until smooth and elastic.

  4. First Rise

    Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 to 1.5 hours, or until it doubles in size.

  5. Shape the Loaves

    Punch down the dough and divide it into 6–8 equal portions. Shape each piece into a small round or oval loaf. Place them on a baking sheet lined with parchment paper, leaving space between each loaf.

  6. Second Rise

    Cover the loaves with a towel and let them rise for another 30–40 minutes, until slightly puffed.

  7. Bake

    Preheat the oven to 220°C (425°F). Place a small dish of water on the bottom rack to create steam, which helps develop a crisp crust. Bake the loaves for 20–25 minutes, or until golden brown and hollow-sounding when tapped on the bottom.

  8. Serve

    Transfer the Pagnotella to a wire rack and let them cool completely before serving.
