Lesotho Beskuit

Ingredients
- 500 g all-purpose flour
- 250 g sugar
- 1 tsp salt
- 3 tsp baking powder
- 250 g butter, melted and cooled
- 500 ml buttermilk (or 500 ml milk + 1 tbsp lemon juice)
- 1 tsp vanilla extract
- 3 eggs
- 450 g bran or muesli (optional)
- Optional: nuts, raisins, or desiccated coconut for extra flavor

Prepare the Dough
Preheat the oven to 180 °C (350 °F). In a large bowl, combine flour, sugar, salt, and baking powder. In another bowl, whisk together eggs, buttermilk, and vanilla extract. Add melted butter to the wet mixture and mix well.

Gradually add the wet ingredients to the dry ingredients, stirring to form a uniform dough. Fold in bran or muesli and any optional add-ins like nuts or raisins.

Grease a 20 × 20 cm baking pan and spread the dough evenly. Bake for 35–40 minutes, or until golden brown. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Cut the baked loaf into strips or squares. Arrange them on a baking tray and dry in an oven at 80–100 °C (175–210 °F) for 4–5 hours, turning every 1.5 hours, until completely dry and crisp.
