Nasi Padang (Indonesian Steamed Rice with Rich Side Dishes)

Ingredients

For the Rice:
  • 2 cups jasmine rice
  • 3 cups water
  • 1/2 teaspoon salt

  • 400 ml coconut milk
  • 3 shallots
  • 3 cloves garlic
  • 2 red chilies
  • 1 teaspoon turmeric powder
  • 1 teaspoon ginger, grated
  • 1 teaspoon galangal, grated
  • 2 kaffir lime leaves
  • Salt to taste
  • 2 tablespoons vegetable oil
Additional Side Dishes (Optional):
  • Fried tempeh
  • Spicy sambal (chili paste)
  • Boiled eggs with coconut curry
  • Stir-fried vegetables

Instructions

  1. Cook the Rice

    Rinse the jasmine rice until the water runs clear. Combine rice, water, and salt in a pot and bring to a boil. Reduce heat to low, cover, and simmer for 15–20 minutes until the rice is fluffy.

  2. Prepare the Rendang

    Blend shallots, garlic, red chilies, turmeric, ginger, and galangal into a smooth paste. Heat vegetable oil in a pot over medium heat and sauté the spice paste until fragrant. Add beef cubes and brown on all sides. Pour in coconut milk, add kaffir lime leaves, and season with salt. Simmer on low heat for 1.5–2 hours, stirring occasionally, until the beef is tender and the sauce is thickened.

  3. Prepare Additional Side Dishes

    While the beef simmers, prepare your chosen side dishes. Fry tempeh until golden and crispy, boil eggs and coat with coconut curry, or stir-fry vegetables with garlic and chili for extra flavor.

  4. Serve

    Plate steamed jasmine rice in the center and arrange rendang and other side dishes around it. Top with a spoonful of spicy sambal for a fiery kick.
