Ingredients:

2 lbs (900 g) Mukeke fish (cleaned and scaled)

2 tbsp (30 ml) vegetable oil

2 cloves garlic, minced

1 tsp (5 g) paprika

1 tsp (5 g) ground coriander

1/2 tsp (2.5 g) chili powder (optional)

Juice of 1 lemon (2 tbsp / 30 ml)

Salt and black pepper to taste

1 medium onion, sliced

1 medium tomato, sliced

Fresh parsley for garnish

Instructions:

Prepare the Fish: Rinse the Mukeke fish thoroughly and pat dry with a paper towel. Make shallow cuts on both sides to allow the seasoning to penetrate.

Make the Marinade: In a bowl, mix vegetable oil, garlic, paprika, coriander, chili powder (if using), lemon juice, salt, and black pepper.

Marinate the Fish: Rub the marinade generously over the fish, including the inside and into the cuts. Let it sit for 30 minutes to absorb the flavors.

Prepare for Cooking: Preheat the grill or oven to 375°F (190°C). If grilling, lightly oil the grill grates. If baking, line a baking tray with foil and arrange onion and tomato slices as a base.

Cook the Fish: For Grilling: Place the fish on the grill and cook for 6-8 minutes per side, or until the flesh is opaque and flakes easily with a fork. For Baking: Lay the fish on the onion and tomato slices, cover with foil, and bake for 20-25 minutes. Uncover and broil for 3-5 minutes to crisp the skin.

Garnish and Serve: Transfer the fish to a serving plate and garnish with fresh parsley.

Serving: Serve Mukeke hot with a side of steamed rice, fried plantains, or a fresh salad. For a complete Burundian experience, pair it with a tangy tomato sauce or pili-pili.
