2 cups (0.9 lb / 400 g) long-grain white rice

1 tsp ground cumin
1 tsp oregano
2 bay leaves
Salt and pepper to taste

Instructions
Prepare the Beans: Rinse the black beans thoroughly. Soak them overnight in water or use the quick soak method by boiling them for 2 minutes, then letting them sit for an hour. Drain and set aside.
Cook the Beans: In a large pot, add the soaked beans, 4 cups of fresh water or broth, bay leaves, and a pinch of salt. Bring to a boil, then reduce heat to a simmer. Cook for 1 to 1.5 hours, or until the beans are tender but not mushy. Remove bay leaves and set beans aside, reserving the cooking liquid.
Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add diced onions, green bell peppers, and minced garlic. Sauté for about 5-7 minutes until softened and fragrant.
Add the Spices and Beans: Stir in the cumin, oregano, sugar, and a pinch of pepper. Add the cooked black beans to the skillet along with some of the reserved bean liquid (about 1 cup). Let the mixture simmer for 10 minutes, allowing the flavors to blend.
Cook the Rice: While the beans are simmering, cook the rice. In a separate pot, combine 2 cups of rice with 4 cups of water or broth. Bring to a boil, then reduce heat to low. Cover and cook for 18-20 minutes until the rice is tender and the water is absorbed.
Combine the Beans and Rice: Once the rice is cooked, gently fold the rice into the bean mixture. Add vinegar and adjust the seasoning with salt and pepper. Allow everything to cook together for another 5 minutes.
