Traditional Croatian Rožata – A Delightful Custard Dessert

Rožata is a traditional Croatian custard dessert, often compared to crème caramel or flan. Originating from the Dalmatian region, this sweet treat is flavored with rose liqueur, giving it a distinctive taste and aroma. Ingredients

4 cups (1 liter) whole milk

1 cup (0.22 lb / 100 g) sugar

6 large eggs

1/4 cup (60 ml) rose liqueur (or vanilla extract if unavailable)

1/4 cup (60 g) sugar for caramel

Zest of 1 lemon

Instructions

Prepare the Caramel: In a small saucepan, heat the 1/4 cup of sugar over medium heat until it melts and turns into a golden caramel. Pour the caramel into a round baking dish, tilting the dish to coat the bottom evenly. Set aside to cool.

Make the Custard: In a large saucepan, heat the milk over medium heat until warm but not boiling. Remove from heat and allow to cool slightly.

Mix the Custard Base: In a separate bowl, whisk together the eggs and 1 cup of sugar until pale and frothy. Slowly add the warmed milk, continuing to whisk. Stir in the rose liqueur and lemon zest.

Combine and Bake: Pour the custard mixture over the cooled caramel in the baking dish. Place the dish in a larger baking pan filled halfway with hot water (a water bath). Bake in a preheated oven at 320°F (160°C) for about 60 minutes, or until the custard is set but still slightly jiggly in the center.

Cool and Serve: Remove from the oven and allow the Rožata to cool completely. Once cool, refrigerate for at least 2 hours or overnight. To serve, run a knife around the edges of the custard, invert onto a serving plate, and allow the caramel to drizzle over the top.

Serving

Rožata is best served chilled, with the rich caramel sauce cascading over the delicate custard. Garnish with fresh fruit or mint leaves for a beautiful presentation.
