Mămăligă Recipe

Mămăligă

Discover the comforting taste of Romanian cuisine with Mămăligă, a traditional cornmeal porridge that has been a staple in Romanian households for centuries. Creamy, hearty, and versatile, Mămăligă can be served as a side dish, a base for stews, or even as a main course when paired with cheese, sour cream, or meats. Its simple ingredients yield a dish that is both rustic and satisfying.

Ingredients

  • 2 cups cornmeal (coarse or medium grind)
  • 6 cups water
  • 1 teaspoon salt
  • 2 tablespoons butter (optional)
  • 1 cup grated cheese (optional, for serving)
  • Sour cream, for serving (optional)

Instructions

  1. Prepare the Water

In a large pot, bring the water to a boil. Add salt to taste.

  2. Cook the Cornmeal

Gradually pour the cornmeal into the boiling water while stirring continuously to prevent lumps. Reduce the heat to low.

  3. Simmer

Cook the mixture, stirring frequently, for about 20–30 minutes, until the mămăligă thickens and pulls away slightly from the sides of the pot.

  4. Finish with Butter

Stir in butter if desired, giving the mămăligă a rich, creamy texture.

  5. Serve

Spoon the mămăligă onto plates while warm. Top with grated cheese or a dollop of sour cream if desired.

Serving

Mămăligă pairs beautifully with stews, grilled meats, or roasted vegetables. It can also be sliced and fried the next day for a crispy variation. Enjoy the wholesome, comforting flavors of Mămăligă, a dish that embodies the heart of Romanian home cooking.
