Kottu Roti (Sri Lankan Stir-Fried Roti)

Ingredients

  • 1 carrot, finely chopped
  • 1 bell pepper, chopped
  • 2 cups cabbage, shredded
  • 2 eggs, beaten
  • 1/2 pound chicken, beef, or shrimp, cooked and chopped (optional)
  • 2 tablespoons soy sauce
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric powder
  • Salt and pepper to taste
  • Fresh cilantro or spring onions for garnish

Instructions

  1. Prepare the Roti

    Chop the flatbreads into small, bite-sized pieces. Set aside.

  2. Cook the Vegetables

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add onions, garlic, and green chilies, and sauté until fragrant. Add carrots, bell pepper, and cabbage, and stir-fry until tender-crisp.

  3. Add Protein and Eggs

    If using meat or shrimp, add it to the skillet and cook until heated through. Push the ingredients to the side of the skillet, pour in the beaten eggs, and scramble them until cooked.

  4. Combine with Roti and Seasonings
