Ingredients

  • 1 kg crab, cleaned and cut into pieces
  • 2 cups cassava leaves, finely chopped (fresh or frozen)
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-2 fresh chili peppers, chopped (adjust to taste)
  • 1 cup coconut milk
  • 1/2 cup roasted peanuts, ground
  • 2 tablespoons vegetable oil
  • Salt to taste
  • 1 teaspoon paprika (optional)
  • Juice of 1 lime

Instructions

  1. Prepare the Base

Heat vegetable oil in a large pot over medium heat. Sauté the onion, garlic, and chili peppers until fragrant and softened, about 5 minutes.

  2. Cook the Crab

Add the crab pieces to the pot and cook for 5-7 minutes, stirring occasionally, until the shells turn bright red and the meat starts to release its juices.

  3. Add Cassava Leaves and Coconut Milk

Stir in the chopped cassava leaves, coconut milk, and paprika if using. Mix well and reduce the heat to low. Cover and simmer for 20-30 minutes, allowing the flavors to meld together.

  4. Incorporate Peanuts

Gradually add the ground peanuts to the stew, stirring constantly to prevent clumping. Continue to simmer for another 10 minutes, until the sauce is thick and creamy.

  5. Season and Finish

Season with salt and lime juice to taste. Stir gently to combine and ensure the crab is fully coated with the sauce.

  6. Serve

Serve Matapa de Caranguejo hot, accompanied by steamed rice, cassava, or crusty bread. Garnish with additional chopped peanuts or fresh herbs for extra flavor.

Serving
