Traditional Maffé – West African Peanut Stew

Ingredients

1 lb (0.45 kg) beef or lamb, cubed

1 large onion, diced

1 large bell pepper, chopped

2 medium carrots, sliced

1 large sweet potato, peeled and cubed

1/2 cup (0.125 kg) peanut butter, unsweetened

3 cups (0.7 L) vegetable or beef broth

2 tbsp tomato paste

1 tsp ground cumin

1 tsp paprika

Salt and pepper to taste

2 tbsp vegetable oil

Optional: 1 small chili pepper, diced (for heat)

Instructions

Sauté the Meat: Heat vegetable oil in a large pot over medium-high heat. Add the cubed meat, season with salt and pepper, and brown on all sides. Remove the meat and set aside.

Cook the Vegetables: In the same pot, add onions and bell pepper, cooking until softened (about 5 minutes). Stir in the tomato paste, cumin, and paprika, allowing flavors to meld.

Add Broth and Vegetables: Pour in the broth, scraping up any bits from the pot’s bottom. Add carrots and sweet potatoes, bringing the mixture to a simmer.

Add Peanut Butter and Meat: Whisk in the peanut butter until smooth. Return the meat to the pot, and add the diced chili pepper if desired for extra heat.

Simmer: Reduce heat, cover, and let the stew simmer for 30-40 minutes until the meat is tender and the vegetables are cooked through.

Adjust Seasoning: Taste and adjust the salt, pepper, or peanut butter for extra creaminess if needed.

Serving

Serve maffé hot over steamed rice, couscous, or with a side of crusty bread. Garnish with fresh herbs if desired.
