Fit-Fit, also known as Fir-Fir, is a popular Ethiopian breakfast dish made by tearing injera, a traditional Ethiopian flatbread, into pieces and mixing it with spiced sauces. This savory, tangy, and slightly spicy meal is often served with berbere seasoning for a flavor-packed start to the day. Fit-Fit can be prepared with either niter kibbeh (a spiced clarified butter) or a simple tomato-based sauce, making it a versatile option for any taste preference.
Ingredients
2 large injera flatbreads (about 1 lb or 0.45 kg)
1 large onion, finely diced
1 large tomato, diced
1/2 tsp (2.5 g) berbere seasoning
2 tbsp (30 ml) niter kibbeh or vegetable oil
1/4 cup (60 ml) water
Salt and pepper to taste
Optional: chopped fresh herbs for garnish
Instructions
Prepare the Sauce: Heat the niter kibbeh or vegetable oil in a skillet over medium heat. Add the diced onion and cook until softened (about 5 minutes).
Add Tomato and Berbere: Stir in the diced tomato and berbere seasoning. Cook for another 5 minutes until the tomato breaks down into a sauce.
Add Water and Season: Pour in the water, then season with salt and pepper. Allow the sauce to simmer for a few minutes until slightly thickened.
Tear and Mix Injera: Tear the injera into bite-sized pieces and add it to the skillet, stirring until each piece is well-coated with the sauce.
Cook Until Warm: Allow the fit-fit to cook for another 2-3 minutes, stirring occasionally, until heated through.
Serving
Serve fit-fit warm, garnished with fresh herbs if desired. Enjoy this dish as a standalone breakfast or pair it with a side of yogurt for a light meal.
