Maafe (West African Peanut Stew)

Ingredients

  • 2 lbs beef, chicken, or lamb, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 large tomatoes, chopped (or 1 can diced tomatoes)
  • 1/2 cup natural peanut butter
  • 4 cups beef or chicken broth
  • 2 carrots, sliced
  • 1 sweet potato, peeled and cubed
  • 1 bell pepper, chopped
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper (optional, for heat)
  • Salt and pepper to taste
  • Fresh parsley or cilantro, for garnish
  • Cooked rice, for serving

Instructions

  1. Prepare the Base

    Heat vegetable oil in a large pot over medium heat. Add the onion, garlic, and ginger, sautéing until fragrant and soft.

  2. Cook the Meat

    Add the meat cubes to the pot, season with salt and pepper, and brown on all sides.

  3. Add Tomatoes and Peanut Butter

    Stir in the chopped tomatoes and cook for a few minutes until softened. Mix in the peanut butter until fully incorporated.

  4. Simmer the Stew

    Pour in the broth, then add the carrots, sweet potato, and bell pepper. Sprinkle in paprika and cayenne (if using). Bring the stew to a boil, then reduce the heat and let it simmer for 45 minutes to 1 hour, or until the meat and vegetables are tender and the sauce is thick and creamy.

  5. Serve

    Ladle Maafe over cooked rice and garnish with fresh parsley or cilantro.
