Lobio (Georgian Bean Stew)

- 2 cups dried kidney beans
- 1 onion, finely chopped
- 3 cloves garlic, minced

- 1/2 teaspoon cayenne pepper (optional)

Rinse the dried kidney beans and soak them in water overnight, or for at least 8 hours.
