Leipäjuusto, also known as Finnish squeaky cheese or bread cheese, is a traditional delicacy from Finland. This unique cheese is known for its mild flavor and distinctive squeak when chewed. Ingredients:

1 gallon (3.8 liters) raw cow’s milk or reindeer/goat milk

1/2 teaspoon rennet

1/4 cup (0.06 liters) water

1 teaspoon salt

Instructions:

Prepare the Milk:

Heat the milk in a large pot to 98-100°F (37-38°C). Use a thermometer to ensure the temperature is accurate.

Add Rennet:

Dissolve the rennet in the water. Stir the rennet solution into the warm milk, mixing gently to combine. Cover the pot and let it sit undisturbed for about 30 minutes, or until the milk has set into a firm curd.

Cut the Curd:

Using a long knife, cut the curd into 1-inch (2.5 cm) cubes. Let the curds rest for about 10 minutes to firm up.

Cook the Curd:

Slowly heat the curds to 104°F (40°C), gently stirring to prevent sticking. Once the temperature is reached, cook the curds for about 30 minutes, continuing to stir gently until the curds are firm.

Drain the Whey:

Line a colander with cheesecloth and pour the curds and whey into it. Allow the whey to drain off, leaving the curds in the cheesecloth. Sprinkle the curds with salt and mix gently.

Shape and Press the Cheese:

Transfer the curds to a round mold or a shallow dish lined with cheesecloth. Press the cheese with a weight for several hours, or until it is firm and holds its shape.

Bake the Cheese:

Preheat your oven to 400°F (200°C). Remove the cheese from the mold and place it on a baking sheet. Bake for 15-20 minutes, or until the cheese is golden brown on top and slightly puffed.

Serving:

Leipäjuusto is best served warm. Cut it into wedges and enjoy it with cloudberry jam or honey for a sweet touch. It can also be served with fresh berries or enjoyed plain as a unique snack. Traditionally, it is served with coffee, making it a delightful addition to any gathering.
