Latvian Rye Bread

Ingredients

  • 4 cups rye flour
  • 1 cup all-purpose flour
  • 2 teaspoons salt

  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 1/4 cups warm water (110°F / 45°C)
  • 1 tablespoon vegetable oil

Instructions

  1. Prepare the Yeast

    In a small bowl, dissolve the molasses (or honey) in warm water. Sprinkle the yeast over the top and let it sit for 5–10 minutes, until it becomes frothy.

  2. Mix the Dough

    In a large mixing bowl, combine rye flour, all-purpose flour, salt, and caraway seeds. Gradually pour in the yeast mixture and vegetable oil, stirring to form a sticky dough.

  3. Knead

    Turn the dough onto a floured surface and knead for about 8–10 minutes, until smooth and elastic. If the dough is too sticky, add a little more all-purpose flour, one tablespoon at a time.

  4. First Rise

    Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm place for 1–2 hours, or until doubled in size.

  5. Shape the Loaf

    Punch down the risen dough and shape it into a round or oblong loaf. Place it on a greased baking sheet or in a lightly greased loaf pan. Cover and let rise for another 30–45 minutes.

  6. Bake

    Preheat the oven to 375°F (190°C). Bake the bread for 35–45 minutes, until the crust is dark brown and the loaf sounds hollow when tapped on the bottom.

  7. Cool

    Transfer the bread to a wire rack and let it cool completely before slicing.
