Lasary (Madagascar Vegetable Salad)

Ingredients

  • 2 medium carrots, julienned
  • 1 small cabbage, thinly sliced
  • 1 small green bell pepper, thinly sliced
  • 1 small red bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 2 tablespoons vegetable oil
  • 2 tablespoons vinegar (white or apple cider)
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • Salt and pepper to taste

Instructions

  1. Prepare the Vegetables

    Wash and julienne the carrots. Thinly slice the cabbage, bell peppers, and onion. Place all the vegetables in a large mixing bowl.

  2. Make the Dressing

    Heat vegetable oil in a small skillet over medium heat. Add mustard seeds and turmeric powder, allowing them to sizzle for a few seconds. Pour the hot spiced oil over the prepared vegetables.

  3. Combine

    Add vinegar, salt, and pepper to the vegetables and toss everything together until well coated. Let the salad sit for 10–15 minutes to allow the flavors to meld.

  4. Serve

    Serve Lasary chilled or at room temperature. Garnish with fresh cilantro for added color and freshness.
