Lamprais (Sri Lankan Baked Rice and Meat Parcel)

Ingredients

For the Rice:
  • 2 cups basmati rice
  • 2 tablespoons ghee or vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon mustard seeds
  • 1 teaspoon fenugreek seeds
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon cumin seeds
  • 2-3 curry leaves (optional)
  • 3 cups chicken or vegetable broth
  • Salt to taste
For the Meat Curry:
  • 500g chicken, beef, or lamb, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, finely sliced
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon ground cinnamon
  • 1 cup coconut milk
  • Salt to taste
Other Components:
  • 6 hard-boiled eggs, peeled
  • 6 small fried brinjals (eggplants), optional
  • 6 banana leaves or parchment paper sheets for wrapping
  • Ghee for brushing

Instructions

  1. Prepare the Rice

    Heat ghee in a large pan over medium heat. Add mustard seeds, fenugreek seeds, cumin seeds, and curry leaves. Sauté until fragrant. Add onions and garlic, cooking until golden brown. Stir in turmeric powder, then add rice and broth. Season with salt. Bring to a boil, then reduce heat and simmer until rice is cooked and fluffy.

  2. Make the Meat Curry

    Heat oil in a pan over medium heat. Sauté onions, garlic, and ginger until aromatic. Add curry powder, chili powder, turmeric, and cinnamon. Stir to combine. Add meat and cook until browned. Pour in coconut milk, reduce heat, and simmer until meat is tender and the sauce thickens. Season with salt.

  3. Assemble the Lamprais Parcels

    Preheat oven to 180°C (350°F). Lay a banana leaf or parchment paper sheet flat. Spoon a portion of rice in the center. Add a portion of meat curry, a hard-boiled egg, and a fried brinjal on top of the rice. Fold the banana leaf or parchment tightly to form a parcel, securing with kitchen twine if necessary. Brush the top with ghee.

  4. Bake

    Place parcels on a baking tray and bake for 20–25 minutes, allowing flavors to meld.

  5. Serve

    Serve Lamprais hot, slicing open the banana leaf at the table to release the aromatic steam. Pair with sambol or pickles for an authentic Sri Lankan experience.
