Ingredients:

For the Sponge Cake:

1 cup (8 oz / 225 g) unsalted butter, softened

4 eggs

2 tsp baking powder

½ cup (120 ml) milk

1 tsp vanilla extract

For the Chocolate Coating:

3 cups (12 oz / 340 g) powdered sugar

½ cup (4 oz / 120 ml) cocoa powder

½ cup (120 ml) boiling water

2 tbsp unsalted butter

2 cups (7 oz / 200 g) shredded coconut

Instructions:

Prepare the Sponge Cake: Preheat the oven to 350°F (175°C). Grease and line a square baking pan (9x9 inches / 23x23 cm). In a bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Sift in flour and baking powder, then mix while adding milk and vanilla extract. Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely before cutting it into 2-inch (5 cm) squares.

Make the Chocolate Coating: In a bowl, sift powdered sugar and cocoa powder. Add boiling water and butter, then mix until smooth.

Assemble the Lamingtons: Using a fork or skewer, dip each cake square into the chocolate coating, ensuring full coverage. Roll the coated cake in shredded coconut, then place on a wire rack to set. Allow the Lamingtons to dry for at least 1 hour before serving.

Serving: Lamingtons are best enjoyed fresh with tea or coffee. They can also be stored in an airtight container for up to 5 days.
