Paella is more than just a dish it's a culinary masterpiece that hails from the sunny shores of Spain, particularly the region of Valencia. Ingredients You'll Need:
2 cups of bomba rice (or any short-grain rice)
4 cups of chicken broth
1/4 teaspoon of saffron threads
1/4 cup of olive oil
1 onion, finely chopped
4 cloves of garlic, minced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 tomato, diced
1/2 teaspoon of smoked paprika
1/2 teaspoon of sweet paprika
1/2 teaspoon of ground cumin
1/2 teaspoon of paprika
Salt and pepper to taste
1/2 pound (225g) of chicken, cut into pieces
1/2 pound (225g) of Spanish chorizo, sliced
1/2 pound (225g) of jumbo shrimp, peeled and deveined
1/2 pound (225g) of mussels, cleaned and debearded
1/2 cup of frozen peas
Lemon wedges for garnish
Fresh parsley for garnish
In a small bowl, combine the saffron threads with a tablespoon of warm water and set them aside to steep.
In a large, shallow pan (traditional paellera if available), heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they become fragrant and translucent.
Add the sliced red and green bell peppers to the pan, cooking until they start to soften.
Stir in the diced tomato, smoked paprika, sweet paprika, ground cumin, paprika, salt, and pepper. Cook for a few minutes until the tomato breaks down.
Add the chicken pieces and Spanish chorizo to the pan, cooking until they are browned.
Pour in the bomba rice and sauté for a couple of minutes, ensuring it's well coated with the flavorful mixture.
Add the saffron-infused water and chicken broth to the pan. Stir gently to combine.
Arrange the jumbo shrimp, mussels, and frozen peas on top of the rice. Distribute them evenly.
Reduce the heat to low, cover the pan, and simmer for about 20-25 minutes, or until the rice is tender and has absorbed most of the liquid. Avoid stirring during this time to develop the coveted crispy bottom layer known as "socarrat."
Once the paella is ready, remove it from the heat and let it rest for a few minutes.
Garnish your paella with lemon wedges and fresh parsley.
