Ingredients:

2 lbs (900 g) lobster tails or whole lobster

1/4 cup (60 ml) olive oil

1 large onion, diced

3 cloves garlic, minced

1 large tomato, chopped

1/2 cup (120 ml) tomato sauce

1/4 lb (115 g) potatoes, peeled and diced

1/4 lb (115 g) carrots, diced

1/2 cup (120 ml) coconut milk or heavy cream

1/2 tsp (2.5 g) paprika

1/4 tsp (1 g) cayenne pepper (optional)

1/2 tsp (2.5 g) black pepper

Salt to taste

Fresh parsley or cilantro for garnish

Instructions:

Prepare the Lobster: If using whole lobsters, boil them briefly in salted water until partially cooked (about 5 minutes). Remove and cool. If using lobster tails, cut them into chunks.

Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add onions and garlic, sautéing until soft and fragrant.

Build the Base: Stir in chopped tomatoes, tomato sauce, paprika, cayenne pepper (if using), and black pepper. Cook for 5-7 minutes, allowing the flavors to blend.

Add Vegetables: Add diced potatoes and carrots to the pot. Pour in 2 cups (500 ml) of water and bring to a boil. Reduce heat and simmer until the vegetables are tender.

Cook the Lobster: Add the lobster pieces to the pot. Stir in coconut milk or cream and simmer for 10-15 minutes, allowing the flavors to infuse and the lobster to cook fully.

Season and Garnish: Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley or cilantro.

Serving: Serve Lagostada hot with steamed rice or crusty bread to soak up the flavorful sauce. Pair it with a crisp white wine or fresh lemonade for an elegant meal.
