Ingredients:

1 lb (450 g) pork or beef (cut into chunks)

1/2 lb (225 g) sausage (e.g., chorizo or linguiça, sliced)

1/2 lb (225 g) chicken (optional, cut into pieces)

1 large onion, diced

2 cloves garlic, minced

3 cups (750 ml) water or broth

1/2 lb (225 g) cabbage or kale, chopped

2 large sweet potatoes, diced

2 tbsp (30 ml) vegetable oil

1 tsp (5 g) paprika

1/2 tsp (2.5 g) black pepper

Salt to taste

Instructions:

Prepare the Base: Heat vegetable oil in a large pot over medium heat. Add onions and garlic, sautéing until fragrant.

Cook the Meat: Add pork, beef, and chicken to the pot. Cook until browned on all sides. Add sausage slices and stir.

Add Corn and Beans: Drain the soaked hominy corn and beans, then add them to the pot. Stir to combine.

Simmer the Stew: Pour in the water or broth, ensuring all ingredients are covered. Add paprika, black pepper, and salt. Bring to a boil, then reduce heat and simmer for 2 hours, stirring occasionally.

Add Vegetables: Stir in sweet potatoes and cabbage or kale. Continue simmering for another 30-45 minutes, or until the vegetables are tender and the stew has thickened.

Adjust Seasoning: Taste and adjust salt or spices as needed.
