Koki Beans is a traditional Cameroonian dish that highlights the versatility of black-eyed peas. Rich in protein and bursting with earthy flavors, this steamed delicacy is made with a blend of ground beans, palm oil, and spices. Ingredients
2 lb (1 kg) black-eyed peas (peeled)
1 cup (250 ml) red palm oil
1 medium onion, finely chopped
1/4 cup (60 g) ground crayfish
1 tsp (5 g) ground pepper
1 bouillon cube (optional)
1/2 tsp (2.5 g) salt (to taste)
Banana leaves or aluminum foil for wrapping
1 cup (250 ml) water (for steaming)
Instructions
Prepare the Black-Eyed Peas Soak the black-eyed peas for 4–6 hours, then peel them by rubbing the beans together to remove the skins. Rinse thoroughly to remove all skins.
Blend the Beans Grind the peeled beans in a blender or food processor, adding a small amount of water to create a smooth, thick paste.
Mix the Ingredients Transfer the bean paste to a large mixing bowl. Add the red palm oil, stirring until the mixture turns a bright orange color. Add the chopped onions, ground crayfish, ground pepper, and bouillon cube. Mix thoroughly. Adjust salt to taste.
Wrap the Mixture Cut banana leaves into medium-sized squares. Place 2–3 tablespoons of the bean mixture onto each leaf, fold securely, and tie with kitchen string. If using aluminum foil, wrap tightly to form small packets.
Steam the Koki Beans Arrange the wrapped Koki Beans in a large pot. Add 1 cup (250 ml) of water to the bottom of the pot, then cover and steam for 45–60 minutes, adding more water as needed to prevent burning.
Check for Doneness Once cooked, the Koki Beans should feel firm to the touch. Remove from the pot and allow to cool slightly before unwrapping.
