Ingredients

1 lb (450 g) Eru leaves (substitute with Afang leaves or spinach if unavailable)

1 lb (450 g) waterleaf (or lamb’s lettuce)

1.5 lb (700 g) assorted meats (beef, goat, or chicken)

1 lb (450 g) dried fish or smoked fish

1 cup (250 ml) palm oil

1/2 lb (250 g) ground crayfish

2 cups (500 ml) water

2 bouillon cubes

1 tsp (5 g) ground pepper

1/2 tsp (2.5 g) salt (to taste)

Instructions

Prepare the Meats Wash and cut the meats into bite-sized pieces. Boil them in a pot with water, one bouillon cube, and a pinch of salt until tender. Set aside the meat and reserve the broth.

Prepare the Fish Wash the dried or smoked fish thoroughly, debone, and set aside.

Prepare the Vegetables Wash and finely chop the Eru leaves and waterleaf.

Cook the Soup Base In a large pot, heat the palm oil over medium heat. Add the ground crayfish and stir for a minute to release its aroma.

Combine Ingredients Add the cooked meats, fish, and reserved broth into the pot. Stir well. Add the ground pepper, the remaining bouillon cube, and adjust salt to taste.

Add the Vegetables Gradually stir in the chopped waterleaf and Eru leaves. Allow the mixture to simmer on low heat for 10–15 minutes, stirring occasionally. The vegetables will soften and absorb the flavors.

Finish Cooking Simmer until the soup reaches your desired consistency. Ensure it is well-seasoned and rich in flavor.

Serving

Eru Soup is best served hot with a side of fufu, garri, boiled yam, or plantains. Its rich and savory taste pairs perfectly with starchy accompaniments.
