Ingredients

For the Soup 2 lb (1 kg) palm nuts or 2 cups (500 ml) canned palm nut concentrate

1 lb (500 g) beef, goat meat, or fish (smoked fish works well)

1/2 lb (250 g) cow skin or tripe (optional)

1 medium onion, chopped

2 cloves garlic, minced

2 tbsp (30 g) ground crayfish

1 tbsp (15 g) Mbanga spice mix (available in African markets)

1 bouillon cube

Salt and pepper to taste

5 cups (1.2 liters) water

Instructions

Extract the Palm Nut Pulp If using fresh palm nuts, boil them until soft, then pound them in a mortar to release the pulp. Mix the pounded nuts with warm water and strain to collect the creamy pulp. Set aside. If using canned palm nut concentrate, dilute it with 2 cups of water to create a smooth consistency.

Prepare the Meat In a large pot, add the beef, goat meat, or fish along with onions, garlic, bouillon cube, salt, and pepper. Cover with water and cook until tender (about 30–45 minutes).

Make the Soup Add the palm nut pulp to the pot of cooked meat. Stir well to combine. Add the Mbanga spice mix, ground crayfish, and any additional seasoning. Simmer the soup for 20–25 minutes, stirring occasionally. Adjust the consistency with water if needed.

Final Touch Add smoked fish or cow skin, if using, and simmer for an additional 10 minutes. Ensure all flavors meld beautifully.
