2 lbs chicken pieces (thighs, drumsticks, or breasts)

1 lb potatoes, peeled and cubed

1 lb carrots, peeled and sliced

1 lb green beans, trimmed and cut into bite-sized pieces

1 onion, chopped

3 cloves garlic, minced

2 tomatoes, diced

1 bell pepper, diced

2 tablespoons vegetable oil

3 tablespoons pepian paste

4 cups chicken broth

Salt and pepper to taste

Fresh cilantro, chopped, for garnish


Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion and minced garlic to the pot. Sauté until softened and fragrant. Stir in the diced tomatoes and bell pepper. Cook until the vegetables are tender. Add the chicken pieces to the pot and brown on all sides. Once the chicken is browned, add the pepian paste to the pot and stir to coat the chicken and vegetables. Pour in the chicken broth and bring the mixture to a simmer. Add the potatoes, carrots, and green beans to the pot. Season with salt and pepper to taste. Cover the pot and simmer for about 30-40 minutes, or until the chicken is cooked through and the vegetables are tender. Once cooked, remove the pot from the heat and let it cool slightly. Serve the Pepian hot, garnished with chopped fresh cilantro.
