1 lb cooked turkey breast, shredded

1 lb cooked ham, diced

1 lb cooked beef tongue, sliced

1 lb cooked chorizo sausage, sliced

1 lb cooked mortadella, diced

1 lb cooked longaniza sausage, sliced

1 lb cooked bacon, chopped

1 lb pickled vegetables (carrots, cauliflower, green beans, etc.)

1 lb assorted cheeses (such as mozzarella, cheddar, and Swiss), cubed

1 lb olives (green and black), pitted

1 lb hard-boiled eggs, halved

1 lb beets, cooked and sliced

1 lb lettuce leaves

1 lb radishes, sliced

1 bunch fresh parsley, chopped

1 bunch fresh mint leaves

1 bunch fresh cilantro, chopped

1 cup white vinegar

1 cup olive oil

Salt and pepper to taste


In a large mixing bowl, combine the shredded turkey breast, diced ham, sliced beef tongue, sliced chorizo sausage, diced mortadella, sliced longaniza sausage, and chopped bacon. Add the pickled vegetables, cubed cheeses, pitted olives, and halved hard-boiled eggs to the bowl. Arrange the cooked beets, lettuce leaves, sliced radishes, chopped parsley, mint leaves, and cilantro on a large serving platter. Carefully transfer the mixed meats and other ingredients on top of the arranged vegetables. In a small bowl, whisk together the white vinegar, olive oil, salt, and pepper to make the dressing. Drizzle the dressing over the Fiambre salad just before serving. Toss lightly to coat all the ingredients evenly.
