Ingredients
- 2 lbs (900 g) chicken pieces (with bones, for flavor)
- 1 cup (200 g) rice
- 6 cups (1.5 liters) water
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp (5 g) ground cinnamon
- 1 tsp (5 g) ground cardamom
- 1/2 tsp (2.5 g) turmeric powder
- 2 tbsp (30 ml) vegetable oil
- 1 tsp (5 g) salt
- Optional: fresh cilantro for garnish
Instructions
-
Prepare the Chicken
Wash the chicken pieces and pat them dry.
-
Sauté the Aromatics
Heat the vegetable oil in a large pot over medium heat. Add the onion and garlic, cooking until fragrant and lightly browned.
-
Cook the Chicken
Add the chicken to the pot and sear for 5-7 minutes on all sides.
-
Add Spices and Water
Stir in the cinnamon, cardamom, turmeric, and salt. Pour in the water and bring to a boil. Reduce the heat to low and simmer for 30 minutes, allowing the chicken to tenderize.
-
Add Rice
Rinse the rice thoroughly and add it to the pot. Stir well and continue to simmer for another 20-25 minutes, stirring occasionally to prevent sticking.
-
Adjust Consistency
If the porridge is too thick, add more water to reach your desired consistency.
-
Garnish and Serve
Remove from heat, garnish with fresh cilantro if desired, and serve hot.
