Hallacas (Venezuelan Holiday Tamales)

Ingredients

For the Dough:
  • 4 cups pre-cooked cornmeal (masa harina)
  • 2 cups chicken or vegetable broth
  • 1/2 cup vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon annatto oil (optional, for color)
For the Filling:
  • 2 pounds beef, pork, and/or chicken, finely chopped
  • 1 large onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup green olives, chopped
  • 1/4 cup raisins
  • 1/4 cup capers
  • 1/2 cup tomato sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • 1 teaspoon paprika or ground cumin (optional)
For Assembly:
  • 20–25 plantain leaves, softened by boiling or steaming
  • Kitchen twine or strips of plantain leaf for tying

Instructions

  1. Prepare the Filling

    Heat vegetable oil in a large skillet over medium heat. Add onions, garlic, and bell pepper, sauté until soft. Add the chopped meats and cook until browned. Stir in tomato sauce, olives, raisins, capers, and spices. Simmer for 15–20 minutes until flavors meld. Adjust salt and pepper. Remove from heat and set aside.

  2. Prepare the Dough

    In a large bowl, mix cornmeal with broth, salt, and annatto oil. Knead until a soft, pliable dough forms. Add more broth if needed to reach the right consistency.

  3. Assemble the Hallacas

    Cut softened plantain leaves into rectangles (about 10x12 inches). Spread a thin layer of dough in the center of each leaf. Spoon a portion of filling onto the dough. Fold the leaf over the filling to form a neat rectangle or square. Secure with kitchen twine or leaf strips.

  4. Cook the Hallacas

    Bring a large pot of water to a gentle boil. Carefully place the wrapped hallacas in the pot and simmer for 1–2 hours. Ensure water covers the hallacas and add more hot water as needed. Remove from water and let cool slightly before unwrapping.
