Ingredients

For the Chicken:
  • 1 whole chicken (about 3–4 lbs)
  • 4–5 slices fresh ginger
  • 4 cloves garlic, smashed
  • 2 stalks green onions
  • Salt, to taste
For the Rice:
  • 2 cups jasmine rice, rinsed
  • 2 tablespoons chicken fat or vegetable oil
  • 3 cloves garlic, minced
  • 1 slice ginger
  • 3 cups chicken broth (from poaching the chicken)
  • Salt, to taste
For the Dipping Sauces:
  • Ginger Sauce: 2 tablespoons minced ginger, 2 tablespoons vegetable oil, pinch of salt
  • Chili Sauce: 2 tablespoons red chili, 1 clove garlic, 1 teaspoon sugar, 1 tablespoon lime juice, salt to taste
  • Dark Soy Sauce: 2 tablespoons dark soy sauce, 1 teaspoon sesame oil

Instructions

  1. Poach the Chicken

    Clean the chicken and rub it with salt. In a large pot, bring enough water to a boil to submerge the chicken. Add ginger and green onions. Lower the chicken into the water, cover, and simmer gently for 40–50 minutes, until fully cooked. Remove the chicken and place it in an ice bath to stop cooking and keep the skin smooth.

  2. Prepare the Rice

    Heat chicken fat or oil in a pan. Sauté garlic and ginger until fragrant. Add the rinsed rice and stir for 1–2 minutes to coat the grains. Transfer rice to a rice cooker or pot, add chicken broth, and cook until fluffy.

  3. Make the Sauces

    For the ginger sauce, combine minced ginger with hot oil and a pinch of salt. For the chili sauce, blend chili, garlic, sugar, lime juice, and salt until smooth. Mix dark soy sauce with sesame oil for a simple dipping sauce.

  4. Serve

    Chop the chicken into serving pieces. Serve with fragrant rice, fresh cucumber slices, and the dipping sauces on the side. Garnish with chopped cilantro or green onions if desired.
