Ingredients

- 2 cups jasmine rice, rinsed
- 2 tablespoons chicken fat or vegetable oil
- 3 cloves garlic, minced
- 1 slice ginger
- 3 cups chicken broth (from poaching the chicken)

For the Dipping Sauces:
- Ginger Sauce: 2 tablespoons minced ginger, 2 tablespoons vegetable oil, pinch of salt
- Chili Sauce: 2 tablespoons red chili, 1 clove garlic, 1 teaspoon sugar, 1 tablespoon lime juice, salt to taste
- Dark Soy Sauce: 2 tablespoons dark soy sauce, 1 teaspoon sesame oil

Poach the Chicken
Clean the chicken and rub it with salt. In a large pot, bring enough water to a boil to submerge the chicken. Add ginger and green onions. Lower the chicken into the water, cover, and simmer gently for 40–50 minutes, until fully cooked. Remove the chicken and place it in an ice bath to stop cooking and keep the skin smooth.

Heat chicken fat or oil in a pan. Sauté garlic and ginger until fragrant. Add the rinsed rice and stir for 1–2 minutes to coat the grains. Transfer rice to a rice cooker or pot, add chicken broth, and cook until fluffy.

For the ginger sauce, combine minced ginger with hot oil and a pinch of salt. For the chili sauce, blend chili, garlic, sugar, lime juice, and salt until smooth. Mix dark soy sauce with sesame oil for a simple dipping sauce.
