- 1 1/2 cups sugar
- 2 cups water
- 4 green cardamom pods, slightly crushed
- 1 teaspoon rose water (optional)
- A few strands of saffron (optional)
For Frying:
- 2 cups vegetable oil or ghee

Prepare the Dough
In a mixing bowl, combine milk powder, all-purpose flour, and baking soda. Add ghee and mix until crumbly. Gradually add milk and knead gently to form a smooth, soft dough. Avoid over-kneading.

Shape the Dumplings
Divide the dough into small portions and roll them into smooth, crack-free balls about the size of a walnut. Keep them slightly smaller than the desired final size, as they will expand while frying and soaking in syrup.

Make the Sugar Syrup
In a saucepan, combine sugar, water, and cardamom pods. Heat until the sugar dissolves completely and the syrup reaches a slightly sticky consistency (not too thick). Add rose water and saffron, if using, and keep warm.

Heat oil or ghee in a deep pan over low to medium heat. Fry the dough balls gently, stirring occasionally, until golden brown on all sides. Ensure the temperature is moderate so they cook through without burning.

Remove the fried dumplings from the oil and immediately transfer them into the warm sugar syrup. Let them soak for at least 1 hour so they absorb the syrup fully and become soft and juicy.
