- 1/2 pound salted codfish
- 6–8 green figs (unripe bananas), peeled and sliced
- 1 medium onion, finely chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 tomato, chopped
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 cup fresh parsley, chopped
- 1 Scotch bonnet pepper, optional, finely chopped
- Water, for boiling

Prepare the Saltfish
Rinse the salted codfish thoroughly to remove excess salt. Place it in a pot with water, bring to a boil, and simmer for 10–15 minutes. Drain, cool, and flake the fish, removing any bones and skin.

In a separate pot, boil the green figs until tender, about 8–10 minutes. Drain and set aside.

Sauté the Aromatics
Heat vegetable oil in a large skillet over medium heat. Add the chopped onion, bell pepper, garlic, and Scotch bonnet pepper if using. Sauté for 3–4 minutes until fragrant and softened.

Add the flaked saltfish and chopped tomato to the skillet. Stir in black pepper and paprika, cooking for another 5 minutes to blend the flavors. Gently fold in the boiled green figs, allowing them to absorb the seasonings.
