Govurma is a classic Azerbaijani dish made with slow-cooked meat, often lamb or beef, infused with aromatic spices and onions. This hearty and flavorful dish is traditionally prepared for festive gatherings and family meals, offering a rich and satisfying taste with every bite.
Ingredients:
For the Govurma:
2.2 lb (1 kg) lamb or beef, cut into chunks
2 tbsp butter or vegetable oil
2 large onions, sliced
1 tsp salt
½ tsp black pepper
½ tsp turmeric
½ tsp ground coriander
2 cloves garlic, minced
1 cup (0.24 l) water or beef broth
Optional Ingredients:
1 cup (0.2 lb / 100 g) dried apricots or prunes (for a slightly sweet touch)
½ cup (0.1 lb / 50 g) toasted almonds or walnuts
Instructions:
Step 1: Prepare the Meat Heat butter or oil in a large pot over medium heat. Add the meat and sear on all sides until browned, about 5–7 minutes. Remove the meat and set aside.
Step 2: Cook the Aromatics In the same pot, add the sliced onions and cook until golden and caramelized. Stir in the minced garlic, turmeric, black pepper, coriander, and salt.
Step 3: Simmer the Govurma Return the meat to the pot and mix well with the onions and spices. Pour in the water or broth, cover, and simmer on low heat for 1.5–2 hours, stirring occasionally. If using dried fruits, add them in the last 30 minutes of cooking.
Step 4: Serve and Garnish Once the meat is tender and the liquid has thickened, remove from heat. Garnish with toasted almonds or walnuts, if desired.
Serving: Govurma pairs perfectly with fluffy rice, flatbread, or bulgur. Serve with fresh herbs and yogurt for a complete meal.
