Escargots de Bourgogne, or Burgundy snails, is a traditional French delicacy that showcases snails baked in a rich garlic and herb butter. This elegant dish, often served as an appetizer, is a testament to the refined flavors of French cuisine and is perfect for impressing guests with a taste of France.

36 snails (canned or prepared)

1 cup (0.45 kg) unsalted butter, softened

1/2 cup (0.1 kg) fresh parsley, finely chopped

4 cloves garlic, minced

1 shallot, minced

1/4 cup (0.06 liters) dry white wine

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon ground nutmeg

36 snail shells (if using canned snails)

1 baguette, sliced for serving

Prepare the Herb Butter:

In a medium bowl, combine the softened butter, chopped parsley, minced garlic, minced shallot, white wine, salt, black pepper, and ground nutmeg. Mix well until all ingredients are fully incorporated.

Prepare the Snails:

If using canned snails, rinse them under cold water and pat dry. Place one snail in each shell. If you don’t have snail shells, you can use a snail dish or small baking dishes.

Stuff the Snails:

Using a small spoon or piping bag, stuff each snail shell with the prepared herb butter. Ensure the snails are well-covered with the butter mixture, filling the shells completely.

Bake the Snails:

Preheat the oven to 375°F (190°C). Arrange the stuffed snails on a baking tray, ensuring they are upright to prevent the butter from spilling out. Bake for 10-12 minutes, or until the butter is bubbly and the snails are heated through.

Serve the Escargots de Bourgogne immediately, accompanied by slices of fresh baguette. The bread is perfect for soaking up the delicious garlic and herb butter. Pair with a crisp white wine for an authentic French dining experience.

Escargots de Bourgogne is an exquisite French appetizer that brings the rich, buttery flavors of Burgundy to your table. This classic dish is sure to impress and delight your guests, making any meal a special occasion.
