Ingredients
- 4 pieces of injera (0.9 kg), torn into small pieces
- 2 large onions (0.44 lb / 0.2 kg), finely chopped
- 3 tablespoons (0.04 kg) niter kibbeh (Ethiopian spiced butter) or regular butter
- 3 cloves garlic (0.015 lb / 0.007 kg), minced
- 2 tablespoons (0.02 kg) berbere spice mix
- 1 cup (0.24 liters) tomato sauce or pureed tomatoes
- 1/2 cup (0.12 liters) water
- Salt, to taste

Prepare the Sauce
Heat the niter kibbeh in a large skillet over medium heat. Add the chopped onions and cook until soft and golden brown, about 15 minutes.

Add Garlic and Berbere
Stir in the minced garlic and berbere spice mix. Cook for 5 minutes, stirring constantly to avoid burning.

Add Tomato Sauce
Pour in the tomato sauce and water, mixing well. Simmer for about 10 minutes until slightly thickened. Season with salt.

Add the torn injera pieces to the skillet, stirring gently to coat them with the sauce. Cook for another 5-7 minutes, allowing the injera to absorb the flavors.
